From the increase of the dielectric constant of the fryer oil the frottino calculates the augmentation of the polar parts and outputs the result by red and green LEDs
For about 5 seconds the stick is dipped into the oil (as deep as the ventilation holes are covered by oil). After that , the result is displayed with red and green LEDs in the showglass.
There are 5 different levels of deterioration from the fresh level detectable :
eidbar :
green constantly = less than 12 %
green flashing = between 12% and 15%
green/red alternating = between 15% and 18%
red constantly = between 18% and 24%
red flashing = more than 24%
The basic adjustement of the frottino is made with peanuts oil. A new adjustement to an oil of the users own choice can easily be done by the enduser. Since the basic adjustment is stored in nonvolatile memory, the stick may be resetted to the inital settings at any time.
The stick is designed for measurements in hot oil up to 180°C, but with measurements in hot oil, some rules how to measure have to be obeyed. Normally the measurements are made in warm oil (up to 130°C)
