SYNTEC OIL CHECK - GENERAL INFORMATION

MEASURING METHOD

The dielectric constant of new frying oil varies from brand to brand. A SYNTEC tester, such as the frottino, is calibrated with new peanuts oil of about 2.5% polar parts, but it may be recalibrated to a different oil at any time.

SYNTEC uses a own internal scale for these dielectric values. On this dielectric axis a range was selected , in which useful results of measurements of oil are achievable: it starts at 0 and end at 255.

Increase of dielectric constant:

Within this range we selected the value for fresh peanuts oil (since it's widely used here in Switzerland) as the base for Oil Check Probe and we gave him the absolute value of 500.

That means : every OIL CHECK PROBE is calibrated that way, that it shows 0% polar parts at 0°C when testing peanuts oil.

A comparison of base values of different oils on the axis for the dielectric constant shows the following chart:

To simplify the use of the measuring method, SYNTEC developped a probe with a USB - Port for a direct connection with a PC or a Laptop.

A new calibration for different oils is now obsolete, since the base values of different oils are now stored on the PC.

New oils may be tested and the behavior of the dielectric test as well as the behavior of the electrical conductivity at increasing temperatur may be studied und compared.

From these tests the new reference values may be stored, in case the polar parts were identified with the column chromatography.








Included in delivery for the SYNTEC OIL CHECK is a electrically heatable probe with a constant current suppy and an isolated test glass bracket as well as a PC programm to read out the probe.

When a singel test is made, a sample of the oil (amount aproxx. 2ccm) is heated in the test glass to about 60°C. The measured values are constantly compared with the preselected reference value and the new polar parts in % are calculated. When the preselected temperature limit is reached, the values are saved and stored together additional information about provenience , tester's name , date etc.
